  • 1/3 cup hot sauce (such as Frank’s RedHot)
  • 1 tablespoon honey
  • 1/2 teaspoon Worcestershire sauce
  • Pinch of cayenne pepper (optional)
  • 1/4 cup pure maple syrup
  • 2 tablespoons adobo sauce from canned chipotles
  • 12 chipotle peppers, minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon unsalted butter
  • Pinch of salt

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment and set a wire rack on top if available. Pat chicken wings dry with paper towels.
  2. In a large bowl, toss wings with oil, salt, pepper, garlic powder, and smoked paprika. Arrange in a single layer on the prepared rack.
  3. Roast wings for 40-45 minutes, turning halfway, until golden, crisp, and cooked through (internal temp 175°F).
  4. For the Honey Sriracha Glaze: In a small saucepan, combine honey, sriracha, soy sauce, and lime juice. Simmer over medium heat for 2-3 minutes. Stir in cornstarch slurry and whisk until thickened, about 1 minute. Remove from heat.
  5. For the Buffalo Sauce: In another saucepan, melt butter. Add hot sauce, honey, Worcestershire sauce, and cayenne. Whisk until smooth and keep warm.
  6. For the Maple Chipotle Sauce: In a third pan, melt butter. Stir in maple syrup, adobo sauce, minced chipotles, apple cider vinegar, and salt. Simmer for 3-4 minutes until slightly thickened.
  7. Divide roasted wings evenly into three bowls. Pour a different sauce over each batch and toss until well coated.
  8. Serve wings hot, garnished with green onions or sesame seeds if desired, alongside celery, carrot sticks, and ranch or blue cheese dressing.

Notes

For gluten-free, use tamari instead of soy sauce. For vegetarian, substitute cauliflower florets for chicken wings. Make sauces ahead for easy game day prep. Don’t crowd the pan for crispier wings. Adjust sauce heat and sweetness to taste. Leftovers reheat best in the oven or air fryer.
