This Easy Crockpot Salsa Chicken is a simple, 3-ingredient meal that’s perfect for busy weeknights. Just toss chicken, salsa, and taco seasoning in the slow cooker for tender, flavorful shredded chicken that’s great for tacos, bowls, and more.

  • 1½ cups salsa (chunky medium salsa recommended)
  • 1 packet (1 ounce) taco seasoning (or 3 tablespoons homemade)

Instructions

  1. Prep the chicken: Place chicken breasts on a cutting board and trim off any visible fat. Pat dry with paper towels.
  2. Season the chicken: Place chicken in the bottom of the crockpot in a single layer. Sprinkle taco seasoning evenly over the chicken and rub it in.
  3. Add the salsa: Pour salsa over the seasoned chicken and spread evenly. Do not add any extra liquid.
  4. Cook: Cover and cook on low for 4 hours (or on high for 2½ hours). Do not lift the lid during cooking.
  5. Check for doneness: Internal temperature should reach at least 165°F. Chicken should be fork-tender.
  6. Shred the chicken: Using two forks, shred the chicken directly in the crockpot. Stir into the salsa juices.
  7. Let it rest: Leave on warm setting for 5 minutes before serving. Stir once more.

Notes

Do not add extra liquid; the salsa and chicken juices provide enough moisture. For best results, use room temperature chicken and shred while hot. To thicken the sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in, then cook on high for 10 minutes.
