  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) brown sugar, packed
  • 2 large eggs, room temperature

  • 2 cups (240 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • For the coating:
  • 1/4 cup (57 g) unsalted butter, melted
  • 1/2 cup (100 g) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium saucepan, bring apple cider to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about 1/4 cup (60 ml), about 8-10 minutes. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a medium bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla, whisking until combined. Stir in reduced apple cider.
  5. Pour wet ingredients into dry ingredients and fold with a rubber spatula until just combined (do not overmix).
  6. Divide batter evenly among muffin cups, filling each about 3/4 full.
  7. Bake for 15-18 minutes, until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes, then transfer to a cooling rack.
  8. While muffins cool, melt 1/4 cup butter in a small bowl. In another small bowl, mix 1/2 cup sugar and 1 tablespoon cinnamon.
  9. Working one at a time, brush warm muffins with melted butter, then roll in cinnamon-sugar mixture to coat. Serve warm.
