A quick and easy fall cocktail made with chilled apple cider, dry prosecco, and a crunchy cinnamon sugar rim. Perfect for brunch, parties, or a cozy night in.

Ingredients

Scale
  • 1 cup (240 ml) apple cider, chilled
  • 1 bottle (750 ml) prosecco or champagne, chilled
  • 1 oz (30 ml) bourbon or vodka (optional)
  • 2 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon honey or maple syrup

Instructions

  1. Prep the Rims: On a small shallow dish, spread the honey or maple syrup in a thin, even layer. On another dish, mix the 2 tablespoons of granulated sugar with the 1 tablespoon of ground cinnamon. Stir well with a fork.
  2. Rim the Glasses: Turn a champagne flute or coupe glass upside down and dip the rim into the honey or maple syrup, twisting gently to coat. Lift straight up and let excess drip off. Then dip the sticky rim into the cinnamon sugar mixture, twisting to coat evenly. Tap the glass lightly to shake off loose sugar. Repeat for all glasses. Set aside.
  3. Chill Your Ingredients: Ensure both apple cider and prosecco are thoroughly chilled before mixing.
  4. Mix the Mimosas (Single Serving): Fill a rimmed glass about one-third full with chilled apple cider. Top off with chilled prosecco or champagne. If adding bourbon or vodka, add it to the glass before the cider.
  5. Mix the Mimosas (For a Crowd): In a large pitcher or liquid measuring cup, combine 2 cups of chilled apple cider with the entire 750ml bottle of chilled prosecco. Stir very gently with a long spoon to combine without losing bubbles. Pour into rimmed glasses.
  6. Garnish and Serve: Add a thin slice of fresh apple or a cinnamon stick to each glass. Serve immediately.

Notes

For best results, rim glasses just before serving to prevent the sugar from getting soggy. Use a dry brut prosecco to balance the sweetness of the cider. For a mocktail, substitute prosecco with sparkling apple cider or ginger ale.
