These candy corn white chocolate cookie bars are quick, easy, and incredibly delicious. With crispy edges, a soft center, and chewy pockets of melted candy corn and creamy white chocolate, they’re the perfect fall dessert that comes together in just 30 minutes.

Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt (plus a pinch for topping)
  • 1 cup candy corn (fresh, such as Brach’s)
  • ¾ cup white chocolate chips (such as Ghirardelli)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides.
  2. In a large microwave-safe bowl, melt ½ cup (1 stick) unsalted butter in 20-second intervals, stirring between each, until fully melted. Let cool for about 2 minutes.
  3. Add ¾ cup packed light brown sugar and ¼ cup granulated sugar to the melted butter. Whisk vigorously for about 30 seconds until smooth and slightly thickened.
  4. Crack in 1 large egg (room temperature) and add 1 teaspoon vanilla extract. Whisk until fully combined and glossy.
  5. In a separate medium bowl, whisk together 1½ cups all-purpose flour, ½ teaspoon baking soda, and ¼ teaspoon salt.
  6. Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold together gently until no streaks of flour remain. Do not overmix.
  7. Fold in 1 cup candy corn and ¾ cup white chocolate chips until evenly distributed. The dough will be thick and slightly sticky.
  8. Transfer the dough to the prepared pan. Use the back of a spatula or lightly greased hands to press it into an even layer. Sprinkle a tiny pinch of flaky sea salt over the top if desired.
  9. Bake for 22-25 minutes, until the edges are golden brown and the center is just set (slightly puffed and no longer wet). A toothpick inserted into the center should come out with a few moist crumbs.
  10. Let the bars cool in the pan for 10 minutes, then use the parchment paper handles to lift them out and transfer to a wire rack. Cool completely (about 45 minutes to 1 hour) before slicing. For clean slices, use a sharp chef’s knife and wipe it clean between cuts.

Notes

Don’t overbake—bars continue to bake from residual heat. Use fresh candy corn for best texture. Room temperature egg helps prevent lumpy dough. For gluten-free, use a 1:1 gluten-free baking flour blend and let dough rest 10 minutes before baking. For dairy-free, use plant-based butter and dairy-free white chocolate chips. Bars taste even better the next day. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
