  • 2 tablespoons brown sugar (25 grams), packed
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes, pierce with a fork, and roast directly on oven rack or on a foil-lined baking sheet for 45-60 minutes until tender. Let cool 10 minutes.
  2. Slice sweet potatoes in half, scoop flesh into a large bowl. Add softened butter, heavy cream, brown sugar, vanilla, cinnamon, nutmeg, and salt. Mash until smooth with a few small chunks if desired. Adjust seasoning to taste.
  3. In a small bowl, combine pecan halves, maple syrup, melted butter, brown sugar, salt, and cinnamon. Stir until pecans are evenly coated.
  4. Reduce oven temperature to 350°F (175°C). Grease a 9×13 inch baking dish. Spread sweet potato mixture evenly in dish. Spoon pecan topping over the top in an even layer without pressing down.
  5. Bake uncovered for 25-30 minutes until edges are bubbly and topping is deeply golden and caramelized. If topping browns too quickly, tent with foil after 20 minutes.
  6. Let casserole rest 5-10 minutes before serving. Scoop warm onto plates.
