  • Goat Cheese Log (1 log)
  • Manchego or Gouda (1 wedge)
  • Prosciutto (thinly sliced, 6-8 oz)
  • Salami (Genoa or peppered, 6-8 oz)
  • Soppressata or Capicola (6-8 oz)
  • Fresh Rosemary Sprigs (6-8 sturdy sprigs per tree, 2 bundles)
  • Crackers and Bread (plain water crackers, buttery rounds, sliced baguette)
  • Red Grapes (1 cup)
  • Pomegranate Seeds (1/2 cup)
  • Fresh Figs (4-6)
  • Dried Apricots (1/2 cup)
  • Dried Figs (1/2 cup)
  • Dried Cranberries (1/2 cup)
  • Toasted Almonds (1/2 cup)
  • Candied Pecans (1/2 cup)
  • Marcona Almonds (1/2 cup)
  • Castelvetrano or Kalamata Olives (1/2 cup)
  • Honey or Fig Jam (1/4 cup)
  • Dark Chocolate (70% cacao, 2-3 oz)
  • Fresh Cranberries (1/4 cup)
  • Bay Leaves or Sprigs of Thyme (for garnish)

Instructions

  1. Prepare the Rosemary Trees: Take fresh rosemary sprigs and use kitchen shears to trim the bottom of each sprig flat. Starting from the bottom, trim the needles into a triangular tree shape, leaving about 1 inch of bare stem at the bottom. Set aside on a paper towel.
  2. Place the Cheeses First: Position cheeses on the board, spacing them out. Place brie or camembert near the center or slightly off-center. Ensure brie is at room temperature.
  3. Insert the Rosemary Trees: Gently push the bare stem of each rosemary tree into the top of the brie, spacing them about an inch apart. Use 3-4 trees per wedge.
  4. Add the Meats: Fold or drape cured meats around the cheeses. Make salami fans by folding slices in half and then in half again. Drape prosciutto in loose ribbons. Place meats in clusters.
  5. Fill in with Accompaniments: Add small bowls of olives, honey, and jam. Scatter nuts, dried fruit, and fresh fruit in the gaps. Start with larger items like figs, then fill in with smaller items like pomegranate seeds and cranberries.
  6. Add the Crackers and Bread: Fan out crackers and sliced baguette in remaining empty spaces. Place in small clusters around edges for easy access.
  7. Garnish and Final Touches: Sprinkle fresh cranberries and pomegranate seeds over the board. Tuck bay leaves or thyme sprigs under cheeses. Drizzle honey over goat cheese log or brie just before serving.
  8. Serve Immediately or Refrigerate: If not serving right away, cover loosely with plastic wrap and refrigerate. Add rosemary trees and fresh garnishes just before serving. Take board out of fridge 20 minutes before serving to bring cheeses to room temperature.

Notes

For best results, bring cheeses to room temperature before serving. Trim rosemary stems carefully to avoid splitting the brie. If stems are thin, bundle 2-3 together with kitchen twine. Keep a backup rosemary sprig in case of breakage. The board can be prepped the day before; add fresh rosemary trees just before serving.
