Ingredients

Scale
  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons molasses (unsulphured)
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup strong chai concentrate (store-bought or homemade)
  • 1 cup oat milk (barista blend recommended)
  • 2–3 tablespoons gingerbread syrup (adjust to taste)
  • Ice cubes (lots of them)
  • Cinnamon stick (for garnish, optional)
  • Star anise (for garnish, optional)
  • Whipped cream (for garnish, optional)
  • Ground cinnamon (for dusting, optional)

Instructions

  1. Make the Gingerbread Syrup: In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Heat over medium heat, stirring occasionally, until the sugar completely dissolves (about 3-4 minutes).
  2. Add the Spices: Once the sugar is dissolved, add 2 tablespoons molasses, 1 teaspoon ground ginger, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, and 1/2 teaspoon ground nutmeg. Whisk until smooth.
  3. Simmer and Cool: Reduce heat to low and let the syrup simmer for 5 minutes. Remove from heat and stir in 1 teaspoon vanilla extract. Let the syrup cool completely before using.
  4. Prepare Your Glass: Fill a tall glass completely with ice cubes (about 1 1/2 cups).
  5. Assemble the Drink: In a mason jar or cocktail shaker, combine 1 cup chai concentrate, 1 cup oat milk, and 2-3 tablespoons of gingerbread syrup. Screw the lid on tightly and shake vigorously for about 15 seconds until frothy.
  6. Pour and Serve: Pour the shaken mixture over the ice-filled glass. Top with whipped cream, a dusting of cinnamon, and a cinnamon stick or star anise if desired.
  7. Enjoy Immediately: Stir with a long spoon before drinking and enjoy right away.

Notes

The gingerbread syrup can be made ahead and stored in the refrigerator for up to two weeks. For a dairy-free version, use coconut whipped cream. For a less sweet drink, reduce syrup to 1 tablespoon. The drink is best served immediately.
