  • 2 cups cooked shredded chicken (about 2 medium chicken breasts or one small rotisserie chicken)
  • 1 tablespoon butter, melted
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons crumbled blue cheese (optional)
  • 2 green onions, thinly sliced

Instructions

  1. Preheat your oven to 375°F (190°C). Take cream cheese out of the fridge to soften to room temperature.
  2. Shred the chicken: remove skin from rotisserie chicken, pull meat apart with forks or fingers into small bite-sized shreds. Toss with melted butter and set aside.
  3. Make the base: in a medium mixing bowl, combine softened cream cheese, sour cream, ranch dressing, buffalo wing sauce, garlic powder, smoked paprika, and onion powder. Use a hand mixer on low speed or a whisk to blend until smooth. Season with salt and pepper to taste.
  4. Fold in the chicken: add shredded chicken to the cream cheese mixture and fold gently with a rubber spatula until evenly distributed.
  5. Transfer to a greased 9×9-inch baking dish and spread into an even layer.
  6. Add the cheese topping: sprinkle shredded cheddar evenly over the dip, then scatter crumbled blue cheese on top if using.
  7. Bake for 18-22 minutes, until bubbly around the edges and cheese is melted and starting to turn golden. For a deeper top, broil for 1-2 minutes, watching closely.

Notes

For best results, use block cream cheese (not spreadable) and shred your own cheddar from a block. The dip tastes even better the next day. To make ahead, assemble without cheese topping, refrigerate, then add cheese and bake just before serving.
