These crispy buffalo cauliflower bites are a crunchy, spicy, slightly sticky snack that happens to be made from a vegetable. Baked, not fried, they’re healthy enough for any day and perfect for game day.

  • 1 large head cauliflower, cut into bite-sized florets (about 6 cups)
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup (240ml) buttermilk
  • 1 1/2 cups (150g) panko breadcrumbs
  • 3 tablespoons (42g) unsalted butter
  • 1/2 cup (120ml) hot sauce (e.g., Frank’s RedHot)
  • 1 teaspoon honey or maple syrup (optional)
  • For serving: ranch or blue cheese dressing, celery sticks, carrot sticks

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top. Lightly spray the rack with cooking spray.
  2. Remove leaves and core from cauliflower. Cut into florets about 1.5 to 2 inches wide.
  3. In a medium bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In another bowl, pour buttermilk.
  4. Working in batches, dip each floret into buttermilk, letting excess drip off. Dredge in flour mixture, shaking off excess. Place on a plate.
  5. Spread panko breadcrumbs in a shallow dish. Press each flour-coated floret into panko, turning to coat all sides. Place on wire rack. Let rest for 10 minutes.
  6. Bake for 20 minutes. Carefully flip each floret with tongs. Bake for another 10-15 minutes until deep golden brown and crispy (total 30-35 minutes).
  7. While cauliflower bakes, melt butter in a small saucepan over low heat. Whisk in hot sauce and honey. Keep warm.
  8. Transfer hot cauliflower to a large bowl. Pour buffalo sauce over top and toss gently with tongs until coated. Serve immediately with ranch or blue cheese dressing, celery, and carrots.

Notes

The key to crispy coating is letting the coated florets rest for 10 minutes before baking. Dry cauliflower thoroughly after washing. Don’t overcrowd the rack. Serve immediately for best crunch. For make-ahead, bake without sauce, cool, refrigerate, then reheat at 400°F for 5-7 minutes and toss in fresh sauce.
