  • 3 tablespoons cornstarch

  • 2 tablespoons avocado oil (or vegetable/canola oil)
  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • ½ teaspoon sesame oil (optional)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Pat the salmon fillets dry with paper towels. Cut them into 1-inch cubes, keeping them as uniform as possible. Place the cubes in a mixing bowl.
  2. In a small bowl, combine the cornstarch, salt, black pepper, and garlic powder. Whisk to combine. Sprinkle this mixture over the salmon cubes and toss gently with your hands until each piece is evenly coated. Shake off any excess.
  3. In another small bowl, whisk together the honey, soy sauce, rice vinegar, and sesame oil. Set it near the stove.
  4. Place your skillet over medium-high heat and add the avocado oil. Let it heat for about 1 minute until it shimmers.
  5. Carefully place the coated salmon cubes in the pan in a single layer. Don’t overcrowd the pan—work in batches if needed. Let them cook undisturbed for 2-3 minutes until the bottoms are golden brown and crispy. Flip each piece with tongs and cook for another 2 minutes on the other side. The salmon should be cooked through but still tender in the center.
  6. Reduce the heat to low. Pour the honey garlic sauce over the salmon bites. Toss gently with the tongs to coat each piece evenly. Cook for about 30 seconds, stirring constantly, until the sauce thickens and glazes the salmon. Don’t let it boil or the honey can burn.
  7. Remove the pan from the heat immediately. Sprinkle with sesame seeds and sliced green onions. Transfer to a serving plate and enjoy right away.
