  • 4 ounces double or triple cream brie
  • 3 ounces mild gorgonzola blue cheese
  • 1/4 cup fig jam
  • 1/4 cup honey
  • 1/3 cup mixed olives (green and kalamata)
  • 1/4 cup cornichons
  • 1/4 cup roasted almonds (unsalted or lightly salted)
  • 1/4 cup dried apricots
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • 1 cup neutral crackers (such as water crackers or rosemary crackers)

Instructions

  1. Place your wooden board or platter on your work surface and wipe clean.
  2. Position small bowls or ramekins for fig jam, honey, and olives in different corners of the board to create anchor points.
  3. Place the brie in one section, cheddar in another, and blue cheese in a third spot, leaving space between them. Leave brie whole or cut into wedges; cut cheddar into thin slices or small cubes; crumble or cut blue cheese into small wedges.
  4. Fold each slice of prosciutto loosely into a ribbon shape and arrange in a small pile near one cheese section. Fold salami slices in half, then in half again to create triangles, and place in a separate pile. If using soppressata, arrange in a small cluster nearby.
  5. Scatter cornichons and roasted almonds in small clusters around the board. Place dried apricots in a pile near the cheddar.
  6. Arrange sliced baguette and crackers in remaining empty spaces, fanning baguette slices in a slight curve along one edge.
  7. Drizzle a little honey over the brie or blue cheese. Sprinkle flaky sea salt over the cheddar. Add a small sprig of rosemary or edible flowers if desired.
  8. Step back and adjust: fill empty spots with extra almonds or crackers, and spread out any crowded areas.

Let cheeses sit at room temperature for 20 minutes before serving for best flavor and texture. For a vegetarian version, skip meats and double up on cheeses and vegetables. For dairy-free, use vegan brie and aged nut-based cheeses. If fig jam is unavailable, substitute with apricot preserves or balsamic glaze.
