Ingredients

Scale
  • 1 package puff pastry sheets, thawed
  • 8 ounces brie cheese
  • 1 cup fresh cranberries
  • 1/2 cup pecans, roughly chopped
  • 2 tablespoons honey
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • 1 large egg, beaten
  • Flaky sea salt, a pinch

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside. If using a mini muffin tin, lightly grease it with butter or non-stick spray.
  2. Toast the pecans: Place the chopped pecans in a dry skillet over medium heat. Stir constantly for 3-4 minutes until fragrant and slightly darker. Transfer to a plate to cool.
  3. Prepare the cranberry mixture: In a small mixing bowl, combine the fresh cranberries, toasted pecans, honey, and chopped rosemary (if using). Stir gently until evenly coated.
  4. Cut the puff pastry: On a lightly floured surface, unfold the thawed puff pastry sheet. Using a sharp knife, cut it into 24 equal squares, each about 2 inches wide.
  5. Cut the brie: Slice the brie into 24 small cubes, about 1/2 inch each. Leave the rind on.
  6. Assemble the bites: Gently press each puff pastry square into a mini muffin cup, letting the corners stick up. Place one cube of brie in the center. Top with a small spoonful of the cranberry-pecan mixture.
  7. Apply the egg wash: In a small bowl, beat the egg with a teaspoon of water. Using a pastry brush, lightly brush the edges of the pastry with the egg wash.
  8. Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  9. Cool slightly: Remove the tin from the oven and let the bites cool in the pan for 5 minutes. Use a small spoon or offset spatula to gently lift them out.
  10. Garnish and serve: Transfer the bites to a serving platter. Sprinkle with a tiny pinch of flaky sea salt and a few fresh cranberries or rosemary sprigs for color. Serve warm.

Notes

Don’t skip the cooling step after baking to prevent cheese from oozing. Keep the pastry cold for best puff. Toast pecans in advance for deeper flavor. Assemble up to 4 hours ahead and refrigerate. For gluten-free, use gluten-free phyllo dough or tart shells. For dairy-free, use plant-based brie.
