  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.
  3. In a separate medium bowl, whisk together the granulated sugar and brown sugar. Add the melted butter and whisk until smooth. Then add the egg, pumpkin purée, and vanilla extract, whisking until fully combined and glossy.
  4. Pour the wet mixture into the dry ingredients. Use a rubber spatula to fold together gently until just combined—do not overmix. The dough will be thick and slightly sticky.
  5. Fold in the chocolate chips until evenly distributed. Reserve a handful to press onto the tops if desired.
  6. Cover the bowl with plastic wrap and chill the dough in the refrigerator for 15 minutes.
