Ingredients

  • Cold brew concentrate (store-bought like Chameleon or Stok, or homemade)
  • Pumpkin spice creamer (Nutpods for dairy-free or Coffee Mate; oat milk creamer for vegan)
  • Milk or milk alternative (whole milk, oat milk, or almond milk)
  • Pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • Maple syrup or brown sugar
  • Pumpkin pie spice (cinnamon, nutmeg, ginger, cloves)
  • Vanilla extract
  • Whipped cream (canned or homemade)
  • Candy eyeballs
  • Cinnamon sticks
  • Ice

Instructions

  1. Set up your coffee bar station: Place cold brew pitcher in the center, arrange milk, creamer, sweeteners, and toppings around it. Keep ice in a separate bowl.
  2. Make the pumpkin spice mixture: In a small bowl, combine 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, and 1/4 teaspoon vanilla extract. Whisk until smooth. (Makes about 2 servings; double or triple for a crowd.)
  3. Fill glasses about three-quarters full with ice (preferably large cubes).
  4. Spoon about 1 tablespoon of the pumpkin mixture into each glass; it will settle at the bottom for a layered look.
  5. Pour cold brew concentrate into each glass until half full (or two-thirds full if using regular cold brew). Stir gently to combine with pumpkin mixture.
  6. Add about 1/4 cup milk or pumpkin spice creamer per glass. Stir again, leaving a swirl at the top.
  7. Top each glass with a generous dollop of whipped cream.
  8. Decorate: Place two candy eyeballs on the whipped cream, pressing gently. Insert a cinnamon stick into each glass like a stirring wand. Optionally drizzle caramel or chocolate sauce over the whipped cream.
  9. Serve immediately. Candy eyeballs soften after about 15 minutes, so enjoy right away.

Notes

For a party, pre-mix the pumpkin mixture in a small jar and let guests add their own. Use less ice than you think you need to leave room for the drink. Make a test cup first to adjust sweetness. Keep whipped cream cold for better hold. Label the cold brew pitcher to avoid confusion. The pumpkin mixture can be made up to 3 days ahead and stored in the fridge.
