A quick and easy no-bake dessert featuring crunchy pretzels, gooey caramel, rich chocolate, and toasted pecans. Perfect for tailgates, parties, or any gathering where you need a sweet and salty treat.

  • ½ cup (1 stick) salted butter
  • 1 cup packed light brown sugar
  • ½ cup sweetened condensed milk
  • 2 tablespoons corn syrup
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup roughly chopped pecans
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Line a 13×18-inch baking sheet with parchment paper or a silicone baking mat. Spread the mini pretzels in a single, even layer across the sheet.
  2. In a medium saucepan over medium heat, combine the butter, brown sugar, sweetened condensed milk, and corn syrup. Stir constantly until the butter is melted and the mixture is smooth, about 3-4 minutes. Bring to a gentle boil and let boil for exactly 2 minutes, stirring continuously.
  3. Remove from heat and stir in the vanilla extract. Let the caramel cool for about 2 minutes.
  4. Slowly pour the caramel evenly over the pretzels. Use a spatula to spread it into all the nooks and crannies. Let sit for 5 minutes.
  5. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth and glossy. Alternatively, use a double boiler.
  6. Pour the melted chocolate over the caramel layer and spread evenly with a spatula.
  7. While the chocolate is still wet, sprinkle the chopped pecans evenly over the top. Press them in gently. If using, sprinkle with flaky sea salt.
  8. Refrigerate for at least 1 hour, or until completely firm. (For a quicker set, freeze for 20-30 minutes.)
  9. Once set, lift the bark out using the parchment paper. Break into irregular pieces with your hands. Serve at room temperature.

Notes

Toast pecans at 350°F for 5-7 minutes before using for best flavor. Use room temperature ingredients for the caramel. Do not over-stir the caramel once boiling to prevent crystallization. Store in an airtight container at room temperature for up to 5 days. Do not freeze.
