  • 810 slices of prosciutto or soppressata
  • 8 ounces sharp cheddar cheese, sliced into thin strips
  • 4 ounces provolone or mozzarella, sliced into strips
  • 4 ounces cream cheese or boursin cheese
  • 1/2 cup of your favorite dip (like spicy chipotle ranch or French onion dip)
  • 1/4 cup honey or hot honey
  • 1/4 cup grainy mustard or whole grain mustard
  • 1 cup crunchy pickles (dill pickle spears or cornichons)
  • 1 cup cherry tomatoes or grape tomatoes
  • 1/2 cup pepperoncini or banana peppers
  • 1/2 cup olives (green or kalamata)
  • 1 box of your favorite crackers (like water crackers, wheat thins, or bagel chips)
  • 1 baguette, sliced into thin rounds and lightly toasted
  • 1 cup pretzel sticks or mini pretzels
  • 1 cup red or green grapes
  • 1/2 cup dried figs or apricots
  • 1/2 cup roasted almonds or honey-roasted peanuts

Instructions

  1. Create the Football Outline: Start by placing your large salami slices in the shape of a football on your board. Place the slices so they slightly overlap, creating a solid ‘leather’ base. The ends of the football should be slightly pointed.
  2. Build the ‘Laces’: In the center of your salami football, take your sliced cheddar and provolone and lay them in parallel lines, running from the top of the football to the bottom. You want about 4-5 lines of cheese strips, about 2-3 inches long, with a small gap between each set.
  3. Fill the ‘End Zones’: At the two pointed ends of the football, place your small bowls of dip. One end gets the spicy ranch or French onion dip, and the other gets the honey or mustard.
  4. Add the ‘Tackling’ (Veggies & Pickles): Fill in the spaces around the laces and the dips. Tuck in your pickles, cherry tomatoes, pepperoncini, and olives, nesting them in so they look like part of the field.
  5. Layer in the ‘Crowd’ (Crackers & Bread): Arrange your crackers and baguette slices around the edges of the football to frame the shape. Place them in a single layer, slightly overlapping, to create a border.
  6. Scatter the ‘Field Goals’ (Fruit & Nuts): Sprinkle your grapes, dried fruit, and nuts in the remaining empty spaces. Don’t overcrowd the board.
  7. Fill in the Gaps: Take a step back and look at your board. If there are any big empty spots, tuck in a few more crackers, a slice of prosciutto, or a handful of pretzels.
  8. Final Touch: Drizzle a little hot honey over the cheese laces and the brie wheel (if using).

Notes

Assemble the board no more than an hour before serving to keep cheese from sweating and crackers from getting stale. For a vegetarian version, skip the meat and double up on cheese and veggies. Use a large board to avoid overcrowding.
