This warm, gooey pecan pie cobbler comes together in about 30 minutes with simple ingredients. Topped with vanilla ice cream, it’s the perfect easy dessert for any gathering.

Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1½ cups pecans, roughly chopped
  • 1 cup light brown sugar, packed
  • ½ cup (1 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 9×13-inch baking dish in the oven while it preheats.
  2. In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the milk, ½ cup melted butter, and 1 teaspoon vanilla extract. Stir until smooth (do not overmix).
  3. Carefully remove the hot baking dish from the oven. Pour the batter directly into the center of the dish.
  4. In a separate small bowl, combine the chopped pecans, packed brown sugar, ½ cup melted butter, and 1 teaspoon vanilla extract. Stir until well coated.
  5. Sprinkle the pecan mixture evenly over the batter. Do not stir.
  6. Bake for 25 to 30 minutes, until the top is golden brown and the edges are bubbly. The center should be set but still slightly jiggly.
  7. Let the cobbler cool on a wire rack for about 10 minutes.
  8. Scoop the warm cobbler into bowls and top each serving with a generous scoop of vanilla ice cream.

Notes

For best results, preheat the baking dish before adding the batter. Toast the pecans lightly beforehand for extra flavor. Let the cobbler rest for 10 minutes before serving to allow the filling to set. If the top browns too quickly, tent with foil for the last 10 minutes of baking.
