A savory roasted butternut squash and sausage stuffing that started as a kitchen accident but became a go-to fall favorite. Sweet roasted squash, savory sausage, and crispy bread edges come together in one pan for a comforting, crowd-pleasing dish.

Ingredients

  • Butternut squash, peeled and cubed into 1-inch pieces (about 4 cups)
  • Italian sausage, casings removed (1 lb)
  • Yellow onion, diced (1 medium)
  • Celery stalks, diced (2 large)
  • Fresh sage leaves, chopped (2 tablespoons)
  • Fresh rosemary, chopped (1 tablespoon)
  • Olive oil (2 tablespoons)
  • Salt and black pepper to taste
  • Day-old crusty bread, cubed (about 6 cups)
  • Low-sodium chicken broth (1 cup)
  • Unsalted butter, melted (3 tablespoons)
  • Garlic cloves, minced (3)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the squash and vegetables: Peel the butternut squash, cut it in half lengthwise, scoop out the seeds, and cube it into 1-inch pieces. Dice the onion and celery. Place everything on a large rimmed baking sheet.
  3. Add the sausage: Tear the sausage into small chunks and scatter them over the vegetables. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  4. Roast for 25 minutes: Spread everything in an even layer. Halfway through, give it a stir so the sausage browns evenly and the squash caramelizes.
  5. While that roasts, prepare the bread mixture: In a large bowl, combine the cubed bread, chopped sage, rosemary, and minced garlic. Pour the melted butter over the top and toss gently. Add the chicken broth a little at a time, tossing after each addition. The bread should be moist but not swimming. Set aside.
  6. Combine everything: After 25 minutes, remove the baking sheet from the oven. Let it cool for about 5 minutes, then transfer the roasted mixture to the bowl with the bread cubes. Gently fold everything together.
  7. Return to the oven: Spread the stuffing mixture back onto the baking sheet (or transfer to a greased 9×13 baking dish). Bake for another 15-20 minutes, until the top is golden brown and crispy.
  8. Rest and serve: Let the stuffing sit for 5 minutes before serving.

Notes

Don’t overcrowd the pan; use two pans if needed. Toast fresh bread before using to prevent mushiness. Adjust sausage drippings to avoid greasy stuffing. Season in layers for best flavor.
