  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar or honey
  • 1/2 cup beef or chicken broth
  • 1 teaspoon toasted sesame oil
  • 4 cups broccoli florets (about 300 g)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated
  • 2 tablespoons vegetable oil (for cooking)
  • Optional garnishes: sesame seeds, thinly sliced green onions

Instructions

  1. Slice the flank steak into thin strips about 1/4 inch thick, slicing against the grain.
  2. In a medium bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, 1/4 teaspoon baking soda, and 1 teaspoon vegetable oil. Mix well and let rest for 15 minutes.
  3. Wash and cut broccoli into bite-sized florets, about 1 to 1.5 inches.
  4. In a small bowl, whisk together oyster sauce, soy sauce, brown sugar, and broth until sugar dissolves.
  5. Heat 1 tablespoon vegetable oil in a wok or skillet over medium-high heat. Stir-fry broccoli for 3-4 minutes until bright green and crisp-tender. Remove and set aside.
  6. Add remaining 1 tablespoon vegetable oil to the pan. Stir-fry minced garlic and grated ginger for about 30 seconds until fragrant.
  7. Add marinated beef in a single layer and stir-fry for 2-3 minutes until browned but tender. Cook in batches if needed to avoid overcrowding.
  8. Return broccoli to the pan, pour in the stir-fry sauce, and toss to combine. Cook for 1-2 minutes until sauce thickens and coats ingredients.
  9. Drizzle with toasted sesame oil and toss gently.
  10. Serve immediately over steamed rice or noodles. Garnish with sesame seeds and green onions if desired.

Marinate beef for at least 15 minutes to tenderize. Slice beef against the grain for tenderness. Cook broccoli just until crisp-tender to avoid mushiness. Avoid overcrowding the pan to ensure proper searing. Adjust sauce thickness with broth or cornstarch slurry as needed. Use tamari and gluten-free oyster sauce for gluten-free version. Frozen broccoli can be used if thawed and patted dry.
