  • 24 oz (680 g) cream cheese, softened (full fat)
  • 1 cup (200 g) granulated sugar
  • 3 large eggs, room temperature
  • ½ cup (120 ml) sour cream
  • ¼ cup (25 g) unsweetened cocoa powder (preferably Dutch-processed)
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • Black gel food coloring (a few drops)
  • ½ cup (120 ml) sour cream (for topping)
  • 2 tablespoons powdered sugar (for topping)
  • 1 teaspoon vanilla extract (for topping)
  • Black food coloring (for spider web decoration)

Instructions

  1. Preheat oven to 325°F (163°C). Crush Oreos finely using a food processor or plastic bag and rolling pin.
  2. Combine crushed Oreos with melted butter and sugar (if using) until mixture resembles wet sand.
  3. Press Oreo mixture evenly into bottom and slightly up sides of a 9-inch springform pan. Bake for 10 minutes, then cool.
  4. Beat softened cream cheese with sugar until smooth (3-4 minutes). Add eggs one at a time, mixing well after each.
  5. Mix in sour cream, cocoa powder, vanilla extract, and salt until combined. Add black gel food coloring and mix gently until deep black.
  6. Pour batter over cooled crust and smooth top. Tap pan lightly to release air bubbles.
  7. Bake at 325°F (163°C) for 50-60 minutes until edges are set and center jiggles slightly.
  8. Mix sour cream, powdered sugar, and vanilla for topping. Spread evenly over cheesecake and bake for 10 more minutes.
  9. Once cooled completely, prepare piping bag with black food coloring mixed with a bit of sour cream topping or black icing.
  10. Pipe concentric circles from center outward on topping. Use toothpick to drag lines from center to edges to create spider web pattern.
  11. Chill cheesecake for at least 4 hours or overnight before slicing.

Notes

Use room temperature ingredients to avoid lumps. Mix gently after adding eggs to prevent cracks. Baking in a water bath is optional but helps reduce cracking. Chill cheesecake thoroughly for best slicing and spider web design. If black gel food coloring is unavailable, mix cocoa powder with blue and red gel colors for a deep hue.
