These budget-friendly champagne jello shots are a fun, affordable treat for New Year’s Eve. Made with sparkling wine, white grape juice, and gelatin, they set into jiggly, bubbly bites that feel fancy without breaking the bank.

Ingredients

Scale
  • 1 ½ cups sparkling wine or budget champagne
  • 1 cup white grape juice
  • ½ cup cold water
  • ¼ cup honey or simple syrup
  • 3 tablespoons unflavored gelatin powder
  • 1 tablespoon fresh lemon juice
  • Optional: gold edible glitter or star-shaped sprinkles
  • ½ cup whipped cream or coconut whipped cream (for topping)
  • Fresh raspberries or pomegranate seeds (for topping)

Instructions

  1. Bloom the gelatin: Pour the ½ cup cold water into a small bowl. Sprinkle the 3 tablespoons of gelatin powder evenly over the surface. Let it sit for about 5 minutes without stirring.
  2. Heat the juice mixture: While the gelatin blooms, combine the white grape juice and honey (or simple syrup) in a small saucepan. Warm over medium heat, stirring occasionally, until the honey dissolves completely (about 3-4 minutes). Do not boil.
  3. Combine gelatin and juice: Pour the hot juice mixture into the bowl with the bloomed gelatin. Whisk gently until the gelatin is completely dissolved (about 1 minute).
  4. Add the champagne and lemon juice: Let the mixture cool for about 2 minutes. Slowly pour in the sparkling wine and lemon juice while stirring gently. Avoid vigorous stirring to retain carbonation.
  5. Pour into cups: Place plastic shot cups on a baking sheet. Using a liquid measuring cup with a spout, pour the mixture into each cup, filling them about three-quarters full. If using edible glitter, sprinkle a tiny pinch into each cup now.
  6. Chill until set: Transfer the baking sheet to the refrigerator. Let the shots set for at least 4 hours, preferably overnight.
  7. Add toppings before serving: Just before serving, add a dollop of whipped cream and a few raspberries or pomegranate seeds on top.

Notes

Don’t boil the champagne; let the juice mixture cool before adding sparkling wine to retain bubbles. Use a gentle hand when stirring to keep carbonation. Test your gelatin first as strength varies by brand. These need at least 4 hours to set; 6-8 hours is ideal. Make a non-alcoholic version with sparkling grape juice for kids.
