Cozy Air Fryer Pumpkin Donut Holes with Cinnamon Sugar

Tender, fluffy pumpkin donut holes made in the air fryer and coated in cinnamon sugar. Ready in under 15 minutes, they are the perfect fall treat without the mess of deep frying.

Ingredients

  • 1 cup (125g) all-purpose flour
  • 1/3 cup (65g) granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (120g) pumpkin puree
  • 1 large egg
  • 2 tablespoons (28g) melted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30ml) milk
  • For the coating:
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon ground cinnamon
  • 3 tablespoons (42g) melted butter

Instructions

  1. Preheat the air fryer to 350°F (175°C) for 3 minutes.
  2. In a medium bowl, whisk together flour, sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In a separate small bowl, whisk together pumpkin puree, egg, melted butter, vanilla extract, and milk until smooth.
  4. Pour the wet mixture into the dry mixture and stir until just combined. Do not overmix; a few lumps are okay. The batter will be thick and sticky.
  5. Let the batter rest for 2 minutes.
  6. Using a 1-tablespoon cookie scoop or two spoons, portion the batter into small balls (about 18-20). Wet your hands slightly to roll them into smooth balls if needed.
  7. Arrange the donut holes in a single layer in the air fryer basket, leaving about 1 inch of space between each. Work in batches if necessary.
  8. Air fry at 350°F (175°C) for 6-8 minutes, checking at 5 minutes. They should be golden brown and a toothpick inserted should come out clean or with a few moist crumbs.
  9. While the donut holes cook, melt 3 tablespoons of butter for the coating. In a shallow bowl, mix ¼ cup sugar and 1 tablespoon cinnamon.
  10. As soon as the donut holes come out, brush each with melted butter, then roll in the cinnamon sugar mixture until fully coated. Serve immediately.

Notes

Do not overmix the batter; it will make the donut holes dense. Use a cookie scoop for even sizing. Check your air fryer temperature as they can vary. Coat the donut holes while hot so the sugar sticks. Let them rest for 2 minutes after coating before eating to set the interior.
