  • 1/2 cup (120ml) buttermilk (or plain yogurt as substitute)
  • For the Brown Butter Glaze:
  • 4 tablespoons (57g) unsalted butter
  • 1 cup (120g) powdered sugar, sifted
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a medium bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Stir in apple cider and buttermilk.
  6. Gradually fold dry ingredients into wet mixture until just combined; a few lumps are okay.
  7. Spoon batter evenly into muffin cups, filling about 3/4 full.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool muffins in the pan for 5 minutes, then transfer to a cooling rack.
  10. To make glaze, melt butter in a small saucepan over medium heat until golden brown and nutty, about 3-5 minutes. Remove from heat.
  11. Whisk browned butter with powdered sugar, maple syrup, vanilla extract, and salt until smooth and pourable.
  12. Drizzle glaze over warm muffins and let set before serving.

Use fresh spices for best flavor. Brown butter carefully to avoid burning. Overmixing batter can make muffins tough.
