Soft, tender apples wrapped in flaky pastry, swimming in a buttery cinnamon sugar sauce. This easy fall dessert is perfect for gatherings and cozy nights in.

Ingredients

Scale
  • 6 medium apples (Granny Smith or Honeycrisp)
  • 2 sheets refrigerated pie crust
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup unsalted butter, cut into small cubes
  • 1 large egg, beaten
  • 1 tablespoon turbinado sugar (optional)
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 baking dish with butter or non-stick spray.
  2. Core the apples using a paring knife or melon baller, leaving the bottom intact so the filling doesn’t leak out. Do not peel the apples.
  3. In a small bowl, mix together 1/2 cup granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Set aside.
  4. If using refrigerated pie crust, let it sit at room temperature for about 15 minutes. On a lightly floured surface, roll each sheet out slightly to about 1/8-inch thickness. Cut each sheet into three equal rectangles (six total).
  5. Place an apple in the center of each pastry rectangle. Fill the apple cavity with about 1 tablespoon of the cinnamon sugar mixture, then top with a small cube of butter. Bring the corners of the pastry up to meet at the top of the apple, pinching the seams together to seal.
  6. Arrange the wrapped apples in the greased baking dish, leaving a little space between each one.
  7. In a small saucepan, combine 1 cup sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 cup water. Bring to a boil over medium heat, stirring occasionally. Remove from heat and stir in 1/2 cup butter and 1 teaspoon vanilla extract until the butter is melted and the sauce is smooth.
  8. Slowly pour the warm sauce around the dumplings, not directly on top, so the sauce comes about halfway up the sides of the apples.
  9. In a small bowl, beat the egg with a tablespoon of water. Brush this mixture over the pastry tops, then sprinkle with turbinado sugar if using.
  10. Bake for 40-45 minutes until the pastry is golden brown and the apples are tender when pierced with a fork. Halfway through, baste the dumplings with the sauce from the bottom of the dish.
  11. Let the dumplings cool for about 10 minutes. The sauce will thicken slightly as it cools.
  12. Serve warm, spooning some of the sauce over each dumpling. Optionally, add a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For best results, use firm apples like Granny Smith or Honeycrisp. If the pastry browns too quickly, tent with foil for the last 10 minutes. The sauce thickens naturally as it bakes; no need for cornstarch. Leftover dumplings can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
