Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in an oven-safe skillet over medium-high heat until shimmering.
  4. Sear the chicken for 3-4 minutes per side until golden brown. Do not move it around. Remove chicken to a plate and tent loosely with foil.
  5. Reduce heat to medium and add butter. Once melted, add minced garlic and stir constantly for about 30 seconds until fragrant.
  6. Slowly pour in heavy cream while whisking, scraping up brown bits from the bottom of the pan. Let it come to a gentle simmer.
  7. Whisk in parmesan cheese a handful at a time until fully melted and smooth. Add dried thyme and red pepper flakes if using. Taste and adjust salt and pepper.
  8. Return chicken to the skillet along with any accumulated juices. Spoon some sauce over each breast.
  9. Transfer skillet to preheated oven and bake for 15-20 minutes, until internal temperature reaches 165°F (74°C) in the thickest part.
  10. Remove from oven and let rest for 5 minutes in the skillet.
  11. Garnish with fresh parsley and serve immediately with extra sauce spooned over each serving.

Notes

For best results, let chicken sit at room temperature for 15-20 minutes before cooking. Don’t overcrowd the pan when searing. Watch the garlic carefully as it burns quickly. If sauce is too thin after baking, remove chicken and simmer sauce on stovetop for 2-3 minutes. If too thick, add a splash of chicken broth or milk. Let chicken rest for 5 minutes before cutting to keep juices in the meat.
