Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt 1/2 cup (115g) unsalted butter. Stir frequently as it foams and turns golden brown, about 4-5 minutes. Remove from heat and let cool slightly.
  2. Prepare the peaches: Peel, pit, and slice peaches to yield about 6 cups. Toss with 3/4 cup granulated sugar, 1/4 cup brown sugar, 1/4 cup flour, and 1 teaspoon ground cinnamon.
  3. Preheat oven to 350°F (175°C).
  4. Make the batter: In a mixing bowl, whisk together 1 cup flour, baking powder, salt, and 1 teaspoon cinnamon. Add milk, vanilla extract, and cooled browned butter. Stir just until combined; batter will be slightly lumpy.
  5. Assemble the cobbler: Pour batter evenly into a greased 9×9-inch baking dish. Spoon peach mixture evenly over batter without stirring.
  6. Add cinnamon sugar crust: Mix 2 tablespoons granulated sugar with 1 teaspoon cinnamon and sprinkle over peach topping.
