  • 2 tablespoons (16 g) all-purpose flour
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup (90 g) rolled oats (not quick oats)
  • ½ cup (60 g) all-purpose flour
  • ½ cup (100 g) packed light brown sugar
  • ½ cup (60 g) chopped pecans
  • ½ cup (113 g or 1 stick) unsalted butter, cold and cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine sliced apples, ½ cup brown sugar, 2 tablespoons granulated sugar, 2 tablespoons flour, 1 tablespoon lemon juice, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt. Toss until apples are evenly coated. Let sit for 5 minutes.
  3. In a separate medium bowl, whisk together 1 cup rolled oats, ½ cup flour, ½ cup brown sugar, ½ cup chopped pecans, ½ teaspoon cinnamon, and ¼ teaspoon salt. Add cold cubed butter. Using a pastry cutter, fork, or fingertips, cut butter into dry mixture until it resembles coarse crumbs with some pea-sized butter pieces remaining. Do not overmix.
  4. Pour apple mixture into prepared baking dish and spread into an even layer. Sprinkle oat pecan topping evenly over apples. Do not press down.
  5. Place dish on a baking sheet. Bake at 350°F (175°C) for 40-45 minutes, until topping is golden brown and apple filling is bubbling around the edges. If topping browns too quickly after 30 minutes, loosely tent with foil.
  6. Let crisp cool on a wire rack for at least 15-20 minutes before serving. Serve warm, preferably with vanilla ice cream or heavy cream.

Notes

For best results, use a mix of tart and sweet apples like Granny Smith and Honeycrisp. Keep butter cold for a crumbly topping. Let the crisp rest after baking to allow the filling to set. To make gluten-free, use a gluten-free all-purpose flour blend. For a vegan version, replace butter with cold coconut oil or vegan butter. For nut-free, omit pecans and add an extra ¼ cup of oats.
