Ingredients

Scale
  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce (recommended: Frank’s RedHot)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese (sharp or medium)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup green onions, chopped
  • 1 large round loaf of sourdough or Italian bread (about 8–9 inches wide)
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • Extra green onions for garnish (optional)
  • Celery sticks and carrot sticks for dipping (optional)
  • Extra tortilla chips or crackers for scooping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Prepare the chicken. If using rotisserie chicken, remove the skin and shred the meat with two forks. You should have about 2 cups. If using raw chicken, boil or bake it until fully cooked (165°F internal temperature), then shred. Let it cool slightly.
  3. Mix the dip filling. In a large mixing bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, shredded cheddar, shredded mozzarella, and chopped green onions. Stir until everything is evenly incorporated. The mixture should be thick and creamy—if it looks too stiff, add a splash of milk or extra ranch.
  4. Carve out the bread bowl. Using a sharp bread knife, cut a circle about 2 inches from the edge of the bread loaf. Cut down about 1.5 inches deep, then carefully pull out the top ‘lid.’ Set the lid aside. Using your hands or a spoon, hollow out the inside of the bread, leaving about a 1-inch thick wall all around. Reserve the bread pieces for dipping or making croutons later.
  5. Brush the bread with butter. In a small bowl, mix the melted butter with garlic powder. Brush the inside of the bread bowl and the cut side of the lid with the butter mixture. This helps the bread get golden and crispy.
  6. Fill the bread bowl. Spoon the buffalo chicken dip mixture into the hollowed bread bowl, packing it down gently. Don’t overfill—leave about 1/2 inch of space at the top so the dip doesn’t spill over as it melts.
  7. Bake the stuffed bread bowl. Place the filled bread bowl on the prepared baking sheet. Put the lid on top (or place it next to the bowl on the sheet). Bake for 20-25 minutes, or until the dip is bubbly and the bread is golden brown. If the bread starts browning too fast, tent it loosely with foil.
  8. Let it rest. Remove from the oven and let the bread bowl sit for 5 minutes. This allows the dip to set slightly so it doesn’t run everywhere when you dig in. The bread will be hot—be careful!
  9. Garnish and serve. Sprinkle extra green onions on top for color. Serve warm with the reserved bread pieces, tortilla chips, celery sticks, or crackers for dipping.

Notes

For extra crunch, toast the hollowed bread bowl for 5 minutes at 375°F before filling. Use full-fat cream cheese for best texture. If the dip is too thick, add a splash of milk or extra ranch. The dip can be made up to 24 hours ahead and stored in the fridge.
