  • 1 tablespoon Italian seasoning (basil, oregano, thyme, rosemary blend)
  • ½ teaspoon red pepper flakes (optional)
  • 6 oz uncooked lasagna noodles, broken into bite-sized pieces
  • 1 cup cottage cheese (small-curd preferred)
  • 1 ½ cups shredded mozzarella cheese (whole milk)
  • ½ cup freshly grated Parmesan cheese
  • A handful fresh basil, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Brown the Italian sausage in a skillet over medium-high heat for 7-10 minutes until cooked through, breaking it up as it cooks. Drain excess fat if necessary.
  2. Add chopped onion to the skillet and cook for 3-4 minutes until softened and translucent. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Transfer the sausage, onion, and garlic mixture to the crockpot. Add crushed tomatoes, tomato paste, chicken broth, Italian seasoning, and red pepper flakes if using. Stir to combine.
  4. Add broken lasagna noodles to the crockpot and stir to distribute evenly.
  5. Cover and cook on low for 3 to 4 hours until noodles are tender but not mushy. Alternatively, cook on high for 2 hours if short on time.
  6. About 15 minutes before serving, stir in cottage cheese, shredded mozzarella, and grated Parmesan. Cover and let the cheese melt into the soup.
  7. Taste and season with salt and pepper as needed. Stir in fresh chopped basil just before serving.

Brown the sausage first to develop caramelized flavor. Add cheese near the end to avoid grainy texture. Watch noodle texture as crockpot times may vary. For gluten-free, use gluten-free noodles.
