A warm, creamy, and tangy taco soup made in the slow cooker with ground beef, beans, corn, and a secret ingredient—cream cheese and ranch seasoning. It’s the perfect comfort food for cold days, requiring just 15 minutes of prep.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained (or frozen corn, no need to thaw)
  • 1 (14.5 oz) can diced tomatoes with green chiles (like Rotel)
  • 1 (14.5 oz) can tomato sauce
  • 1 (4 oz) can diced green chiles (optional, for extra heat)
  • 1 (1 oz) packet taco seasoning (like McCormick or Old El Paso)
  • 1 (1 oz) packet ranch seasoning mix (like Hidden Valley)
  • 4 oz cream cheese, softened and cubed (full-fat works best)
  • 2 cups beef broth (or chicken broth; low-sodium preferred)
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheddar cheese, sour cream, fresh cilantro, diced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Brown the beef: In a large skillet over medium-high heat, cook the ground beef and diced onion for 6-8 minutes, breaking up the meat, until browned and onion is translucent. Drain excess fat. Add minced garlic and cook for 1 minute until fragrant.
  2. Transfer to the slow cooker: Dump the browned beef and onion mixture into a 6-quart slow cooker.
  3. Add the canned goods: Add the drained black beans, kidney beans, corn, diced tomatoes with green chiles, tomato sauce, and diced green chiles (if using). Stir to combine.
  4. Season it up: Sprinkle taco seasoning and ranch seasoning over the top. Pour in beef broth. Stir until seasonings are dissolved.
  5. Cook low and slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. Add the cream cheese: About 30 minutes before serving, add the softened cream cheese cubes. Stir gently until fully melted and incorporated.
  7. Taste and adjust: Add salt and pepper if needed. For more heat, add cayenne pepper or hot sauce.
  8. Serve and garnish: Ladle into bowls and top with desired toppings like sour cream, cheddar cheese, avocado, cilantro, and crushed tortilla chips.

Notes

Don’t skip browning the meat for best flavor. Add cream cheese in the last 30 minutes to avoid graininess. Always rinse canned beans to prevent a starchy texture. For a thicker soup, cook uncovered for 20-30 minutes. Leftovers keep for up to 4 days in the fridge or 3 months in the freezer.
