Instructions

  1. Line two baking sheets with parchment paper or silicone mats. Preheat oven to 350°F (175°C).
  2. Beat 1 cup softened unsalted butter with 1 cup packed dark brown sugar until light and fluffy, about 3-4 minutes.
  3. Beat in 1 large room-temperature egg and 1 teaspoon vanilla extract until smooth and creamy.
  4. In a separate bowl, whisk 2 ½ cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, and ½ teaspoon salt.
  5. Gradually add dry mixture to wet ingredients, mixing on low speed or folding gently until a soft dough forms. Chill dough 15-20 minutes if sticky.
  6. Lightly flour work surface and roll dough to about ¼-inch (6mm) thickness. Cut shapes with school bus cookie cutter and place 2 inches apart on baking sheets.
  7. Bake for 10-12 minutes until edges just start to turn golden. Cookies should remain soft.
  8. Transfer cookies to wire racks and cool completely before frosting.
  9. Beat 3 tablespoons softened butter with 2 cups sifted powdered sugar, ½ teaspoon cinnamon, and ½ teaspoon vanilla. Add 1-2 tablespoons milk gradually until spreadable consistency is reached. Stir in yellow gel food coloring.
  10. Spread frosting evenly on each cookie with a small spatula or butter knife. Decorate with edible markers or piping gel for windows and wheels.
  11. Let cookies sit at room temperature for about 30 minutes to allow frosting to set before serving.
