These creamy, protein-packed overnight oats blend cottage cheese and pumpkin puree for a delicious, filling breakfast that tastes like pumpkin pie. Perfect for meal prep and busy fall mornings.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240g) cottage cheese
  • 1/2 cup (120g) pumpkin puree
  • 1/2 cup (120ml) unsweetened almond milk
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 tablespoon (15g) chia seeds
  • Pinch of salt

Instructions

  1. In a blender, combine cottage cheese, pumpkin puree, almond milk, maple syrup, pumpkin pie spice, vanilla extract, and salt. Blend on high until completely smooth, about 30 seconds.
  2. In a medium mixing bowl, add rolled oats and chia seeds. Pour the blended pumpkin mixture over the oats and stir until evenly coated.
  3. Divide the mixture evenly among four 8-ounce jars. Tap jars gently on the counter to settle the oats.
  4. Screw lids on tightly and refrigerate for at least 6 hours, preferably overnight.
  5. Serve cold or warm. To warm, microwave a jar (lid off) for 45-60 seconds. Stir well before eating and add desired toppings.

Notes

Don’t skip blending the cottage cheese—stirring it in whole creates curds. For best texture, use rolled oats, not quick or steel-cut. Oats keep in the fridge for up to 5 days.
