  • 2 tablespoons maple syrup (real maple syrup, Grade A amber preferred)
  • 1 tablespoon olive oil (extra-virgin)
  • 1/2 teaspoon ground cinnamon
  • Salt and black pepper to taste (flaky sea salt recommended)
  • Optional: fresh thyme leaves or toasted pumpkin seeds for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the delicata squash thoroughly and pat dry. Trim off both ends, then cut the squash crosswise into rings about 1/2-inch thick. Scoop out the seeds and stringy pulp from the center of each ring.
  3. In a small bowl, whisk together the maple syrup, olive oil, cinnamon, and a generous pinch of salt and pepper.
  4. Place the squash rings on the prepared baking sheet in a single layer. Brush the maple glaze generously over both sides of each ring. Drizzle any remaining glaze over the top.
  5. Roast for 10 minutes. Flip each ring carefully, then roast for another 8-10 minutes, until tender and caramelized with slightly crispy edges.
  6. Remove from the oven and let cool on the pan for 2-3 minutes. Transfer to a serving platter, garnish with fresh thyme or pumpkin seeds if desired, and serve warm.

Notes

Slice rings evenly (about 1/2-inch thick) for uniform cooking. Don’t overcrowd the pan—use two sheets if needed. Line the pan for easy cleanup. For a savory twist, replace cinnamon with dried rosemary or thyme and add minced garlic. For a spicy version, add a pinch of cayenne. For a balsamic version, replace 1 tablespoon maple syrup with balsamic vinegar. Leftovers can be stored in an airtight container in the fridge for up to 3 days; reheat in a 350°F oven for 5-7 minutes.
