A warm, creamy pumpkin chai latte made with real pumpkin puree, chai tea, and steamed oat milk. This easy 10-minute recipe is perfect for cozy fall days and is naturally vegan and dairy-free.

  • 1 ½ cups (360 ml) oat milk (barista blend recommended)
  • 2 tablespoons (30 g) pumpkin puree (not pumpkin pie filling)
  • 2 chai tea bags (black tea chai, e.g., Tazo or Stash)
  • 12 tablespoons (1530 ml) maple syrup (adjust to taste)
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: whipped cream (coconut whipped cream for dairy-free), cinnamon or pumpkin pie spice, maple syrup or caramel sauce

Instructions

  1. Brew the Chai: In a small saucepan, bring ½ cup (120 ml) water to a boil. Remove from heat, add the two chai tea bags, and steep for 4-5 minutes. Do not squeeze the tea bags when removing.
  2. Combine the Pumpkin Mixture: In a small bowl, whisk together the pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt to form a smooth paste.
  3. Heat the Oat Milk: After removing the tea bags, add the oat milk to the saucepan with the chai-infused water. Heat over medium heat, whisking gently, until steaming but not boiling (small bubbles around the edges).
  4. Whisk in the Pumpkin Paste: Add the pumpkin mixture to the warm milk and chai. Whisk vigorously until completely smooth and the color turns a warm golden-orange (about 30 seconds).
  5. Froth the Milk (Optional): Use a handheld milk frother in the saucepan to create foam, or pour the latte into a French press and pump the plunger up and down for 20-30 seconds.
  6. Pour and Serve: Pour the latte into a mug. If frothed, hold back the foam with a spoon while pouring, then spoon the foam on top. Add desired toppings and serve immediately.

Notes

Don’t boil the oat milk—it can separate and become grainy. Make a paste of the pumpkin puree and spices first to avoid lumps. Adjust sweetness to taste. For an iced version, let the chai and pumpkin mixture cool, then pour over ice with cold oat milk. A pinch of salt is essential to balance flavors.
