Ingredients

Scale
  • 6 large apples (Granny Smith or a mix of Granny Smith and Honeycrisp), peeled, cored, and sliced about 1/4-inch thick
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar (for caramel)
  • 3 tbsp unsalted butter, cubed (for caramel)
  • 1/4 cup heavy cream, warmed (for caramel)
  • 1/2 tsp flaky sea salt (for caramel)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch pie dish.
  2. In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice until evenly coated.
  3. Transfer the apple mixture into the prepared pie dish, spreading it out evenly.
  4. In a separate bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until crumbly but holds together when pressed.
  5. Sprinkle the oat crumble topping evenly over the apples.
  6. Bake the pie for 45–50 minutes or until the topping is golden brown and the apple filling is bubbling. Tent with foil if topping browns too quickly.
  7. While baking, make the salted caramel sauce: melt granulated sugar in a medium saucepan over medium heat without stirring, swirling occasionally until deep amber.
  8. Add cubed butter carefully and stir until melted. Slowly pour in warm heavy cream while stirring constantly. Simmer for 2 minutes until smooth.
  9. Remove caramel from heat and stir in flaky sea salt. Let cool slightly.
  10. Remove pie from oven and cool for at least 15 minutes.
  11. Drizzle salted caramel sauce generously over each slice before serving.
  12. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Use tart apples like Granny Smith for balance. Keep apple slices uniform for even cooking. Melt butter but not too hot for crumble topping to avoid sogginess. Do not stir sugar while melting for caramel; swirl pan gently. Tent pie with foil if topping browns too fast. Vegan and gluten-free substitutions are possible. Store leftovers in airtight container in fridge up to 4 days or freeze up to 2 months. Reheat gently to keep topping crisp.
