  • 2 cups low sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour (or cornstarch/gluten-free flour for gluten-free option)
  • 2 tablespoons unsalted butter, softened
  • Salt to taste (start with 1 teaspoon)
  • Fresh thyme sprigs (optional)

Instructions

  1. Trim any excess fat from the beef tips and pat them dry with paper towels. Slice mushrooms and chop onion and garlic.
  2. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add beef tips in batches, avoiding overcrowding. Brown all sides until nicely caramelized (about 3-4 minutes per batch). Set browned beef aside.
  3. In the same skillet, add remaining butter. Cook onions until translucent, about 3 minutes. Add mushrooms and garlic, cooking until mushrooms release moisture and start to brown, 4-5 minutes.
  4. Pour in 1/4 cup beef broth to deglaze the pan, scraping up browned bits.
  5. Transfer browned beef, sautéed mushrooms and onions, remaining beef broth, Worcestershire sauce, crushed peppercorns, and salt to the slow cooker. Stir to combine.
  6. Cover and cook on low for 6-8 hours until beef is tender.
  7. About 30 minutes before serving, mix flour with a few tablespoons of cold water to create a slurry. Stir into the slow cooker to thicken the gravy. Add more broth if too thick.
  8. Taste and adjust salt or pepper if needed. Remove fresh thyme sprigs before serving.
