  • 1 tablespoon ketchup

Instructions

  1. Brown the beef: Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up, until browned (5-6 minutes). Leave about 1 tablespoon of fat in the pot. Transfer beef to a bowl and set aside.
  2. Sauté aromatics: In the same pot, add diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant, scraping up browned bits.
  3. Build soup base: Sprinkle flour over onions and garlic, stirring constantly for 1 minute. Slowly pour in chicken broth while stirring. Add diced potatoes, salt, pepper, smoked paprika, and garlic powder.
  4. Simmer potatoes: Bring to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes until potatoes are fork-tender.
