Creamy Cheesy Butternut Squash & Sage Soup

This creamy, cheesy butternut squash soup is velvety smooth with nutty Gruyère and crispy fried sage. It’s a comforting fall soup that’s quick, easy, and perfect for chilly days.

  • 1 medium butternut squash (about 3 pounds), peeled, seeded, and cubed into 1-inch pieces
  • 1 large yellow onion, diced
  • 4 cloves garlic, smashed
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 cups low-sodium vegetable broth
  • ½ cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 1215 fresh sage leaves
  • 2 tablespoons unsalted butter
  • Optional toppings: toasted pumpkin seeds, extra shredded cheese, drizzle of brown butter

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube butternut squash into 1-inch pieces. Toss squash, onion, and garlic with olive oil, salt, and pepper. Spread in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized.
  2. While squash roasts, fry sage leaves: melt butter in a small skillet over medium heat. Add sage leaves one at a time, cooking 10-15 seconds per side until darker and translucent. Transfer to paper towel-lined plate and sprinkle with salt. Set aside.
  3. Transfer roasted vegetables to a large soup pot. Add vegetable broth and bring to a simmer over medium-high heat. Reduce heat to low and simmer for 5 minutes.
  4. Puree soup until smooth using an immersion blender directly in the pot, or carefully transfer to a regular blender in batches. Blend until velvety.
  5. Stir in heavy cream and shredded Gruyère over low heat until cheese is fully melted and soup is glossy. Adjust salt and pepper to taste.
  6. Ladle into bowls and top with crispy sage leaves and optional toppings. Serve immediately.

Notes

Don’t skip roasting the squash—it concentrates sweetness and adds depth. Shred your own Gruyère for smooth melting. Add cheese over low heat to prevent separation. Soup tastes even better the next day. Freezes well for up to 3 months.
