This creamy copycat pumpkin cream cold brew is a quick and easy homemade version of the popular coffee shop drink. Made with simple ingredients like pumpkin purée, heavy cream, and cold brew concentrate, it delivers a rich, spiced, and velvety fall treat in just five minutes.

  • 1/4 cup milk of your choice (whole milk, oat milk, or almond milk)
  • 1 to 2 tablespoons vanilla syrup or maple syrup
  • Ice cubes
  • 1/4 cup heavy cream or heavy whipping cream
  • 2 tablespoons pumpkin purée (100% pumpkin, not pie filling)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Make the pumpkin cream topping: In a blender or milk frother cup, combine 1/4 cup heavy cream, 2 tablespoons pumpkin purée, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, 1/2 teaspoon vanilla extract, and a tiny pinch of salt. Blend on low speed for about 15 to 20 seconds until thick but still pourable.
  2. Let the pumpkin cream rest for about 60 seconds to allow flavors to meld.
  3. Fill a tall glass with ice cubes almost to the top.
  4. Pour 1/4 cup of milk over the ice.
  5. Add 1 to 2 tablespoons of vanilla syrup or maple syrup to the milk and stir gently.
  6. Slowly pour 1 cup of cold brew concentrate over the back of a spoon or directly into the center of the glass to maintain layers.
  7. Gently spoon or pour the pumpkin cream over the top of the cold brew. Do not stir.
  8. Sprinkle a light dusting of pumpkin pie spice on top. Garnish with a cinnamon stick if desired.
  9. Serve immediately with a straw.

Notes

Use cold ingredients for best results. Do not over-blend the pumpkin cream; blend just until combined and slightly thickened. For dairy-free version, use full-fat canned coconut cream and oat milk. The pumpkin cream can be stored in an airtight container in the fridge for up to 3 days.
