A comforting and easy-to-make creamy beef stroganoff cooked slowly in a crockpot, served over tender egg noodles. Perfect for busy weeknights and cozy dinners.

  • 1 medium yellow onion, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth (low-sodium preferred)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 1 cup sour cream, full fat
  • 2 tablespoons all-purpose flour
  • 12 oz egg noodles, cooked according to package instructions, buttered and drained

Instructions

  1. Trim excess fat from beef chuck roast and cut into 1-inch cubes. Slice onion thinly, clean and slice mushrooms, and mince garlic.
  2. Optional: Brown beef cubes in a hot skillet with oil for 2-3 minutes per side for extra flavor.
  3. Place beef, onions, mushrooms, and garlic into the crockpot. Pour beef broth, Worcestershire sauce, and Dijon mustard over the top. Season with salt and pepper.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until beef is tender.
  5. About 15 minutes before serving, cook egg noodles according to package instructions, drain, and toss with butter.
  6. Whisk sour cream and flour together until smooth. Stir gently into the crockpot. Heat on low for 15-20 minutes until sauce thickens, avoiding boiling.
  7. Adjust seasoning with salt and pepper. Serve stroganoff spooned over warm egg noodles. Garnish with fresh parsley if desired.

Notes

For gluten-free, substitute flour with cornstarch and use gluten-free noodles. Add sour cream at the end to prevent curdling. Browning beef is optional but recommended for deeper flavor. If sauce is too thin, add a slurry of flour or cornstarch and water and cook on low until thickened. Avoid overcooking noodles to prevent mushiness.
