  • A handful fresh basil or parsley, chopped for garnish
  • 1 tablespoon olive oil or butter (optional, for searing)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and a pinch of Italian seasoning. (5 minutes)
  2. Optional: Heat olive oil or butter in a skillet over medium-high heat. Quickly sear chicken breasts for 1-2 minutes per side until golden but not cooked through. (5 minutes)
  3. In a bowl, combine heavy cream, chicken broth, minced garlic, grated Parmesan, dried Italian seasoning, and optional red pepper flakes. Whisk until smooth. (3 minutes)
  4. Place chicken breasts in the slow cooker. Scatter chopped sun-dried tomatoes over the top, then pour the creamy mixture evenly over everything. Do not stir. (2 minutes)
  5. Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours until chicken is tender and cooked through (internal temp 165°F / 74°C). (2-4 hours)
  6. Carefully remove the chicken to a serving dish. Stir the sauce in the crockpot—if too thin, cook uncovered on HIGH for 15-20 minutes to thicken. Pour sauce back over the chicken. (5-10 minutes)
  7. Sprinkle chopped fresh basil or parsley over the top. Serve immediately while warm. (2 minutes)

Notes

Searing chicken is optional but adds flavor. Use oil-packed sun-dried tomatoes for richness or soak dry ones before use. If sauce is too thin after cooking, thicken by cooking uncovered on HIGH for 15-20 minutes. Avoid opening the slow cooker lid frequently to maintain temperature. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Can be cooked in a Dutch oven or baked at 325°F for 45-55 minutes if no slow cooker is available.
