  • Freshly ground black pepper, to taste
  • Chives or green onions, finely chopped (optional)
  • 1 teaspoon olive oil (optional, for toasting bagel in pan)

Instructions

  1. Prep your ingredients (5 minutes): Crack the eggs into a medium bowl. Add the cottage cheese and milk or cream (if using). Whisk together just until combined, keeping some lumps for creaminess.
  2. Toast the everything bagel (3-4 minutes): Slice the bagel in half and toast until golden and crisp. For extra flavor, brush each half lightly with olive oil and toast in a skillet over medium heat for 1-2 minutes per side. Set aside.
  3. Heat your pan (1 minute): Place a non-stick skillet over low heat and melt the butter gently. Avoid browning the butter by reducing heat if necessary.
  4. Cook the eggs (4-5 minutes): Pour the egg and cottage cheese mixture into the pan. Let sit undisturbed for about 30 seconds. Using a spatula, gently push the eggs from the edges toward the center, folding slowly every 20–30 seconds until soft, creamy curds form.
  5. Season and finish (1 minute): When eggs are just about set but still slightly glossy, season with salt and pepper. Remove from heat promptly to allow carryover cooking.
  6. Assemble and serve: Spoon the creamy scrambled eggs onto the toasted everything bagel halves. Sprinkle with chopped chives or green onions if desired.
