  • 1 medium yellow onion, chopped (about 1 cup)
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) crushed tomatoes
  • 1 cup chicken or vegetable broth (low-sodium)
  • 1/4 cup cottage cheese (full-fat preferred)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream or whole milk
  • Fresh basil leaves for garnish (optional)
  • 4 slices sourdough or country bread
  • 2 tablespoons unsalted butter, softened (for grilled cheese)
  • 4 slices sharp cheddar cheese

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook for 5-7 minutes until soft and translucent.
  3. Add the minced garlic and stir for about 30 seconds until fragrant.
  4. Pour in the crushed tomatoes and broth, scraping up any browned bits. Bring to a gentle simmer, then reduce heat to low.
  5. Add sugar, salt, and pepper. Simmer uncovered for 10 minutes, stirring occasionally.
  6. While soup simmers, mash the cottage cheese in a small bowl until smooth.
  7. Remove pot from heat. Blend soup with an immersion blender until smooth (or carefully blend in batches in a regular blender).
  8. Stir in the blended cottage cheese and heavy cream (or milk). Adjust seasoning to taste.
  9. Cover and keep warm over lowest heat while making grilled cheese.
  10. Heat a non-stick skillet or griddle over medium heat. Spread softened butter on one side of each bread slice.
  11. Place two slices buttered side down in skillet, top each with two slices of cheese, then cover with remaining bread slices buttered side up.
  12. Cook for 3-4 minutes per side until golden brown and cheese is melted.
  13. Ladle soup into bowls, garnish with basil if desired, and serve with grilled cheese cut into strips or halves.

Notes

For extra creaminess, blend cottage cheese until completely smooth before adding. Use good-quality canned tomatoes for best flavor. Let soup sit for 10-15 minutes after blending for deeper flavor. Grilled cheese is best made fresh.
