Creamy Loaded Buffalo Chicken Dip (Easy Tailgate Recipe)

This creamy loaded buffalo chicken dip is the perfect game day appetizer, featuring tender shredded chicken, a blend of cheeses, and authentic buffalo wing flavor. It stays warm and creamy for hours, making it ideal for tailgates and watch parties.

  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (preferably Frank’s RedHot Original)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded sharp cheddar cheese (freshly shredded)
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with non-stick spray or butter.
  2. Shred your chicken into small, even pieces using two forks.
  3. Soften the cream cheese in a microwave-safe bowl for about 20 seconds if needed.
  4. In a large mixing bowl, combine the softened cream cheese, buffalo wing sauce, ranch dressing, garlic powder, onion powder, and smoked paprika. Blend until completely smooth using a hand mixer or spatula.
  5. Fold in the shredded chicken, 3/4 cup cheddar cheese, and 3/4 cup Monterey Jack cheese. Reserve the remaining cheese for the top. Stir until evenly distributed.
  6. Transfer the mixture to the prepared baking dish and spread into an even layer.
  7. Sprinkle the remaining cheddar and Monterey Jack cheese over the top. Add blue cheese crumbles if using.
  8. Bake for 20-25 minutes, until bubbly around the edges and the top cheese is melted and starting to turn golden.
  9. Remove from the oven and let rest for 5 minutes. Top with sliced green onions before serving.
  10. Serve immediately with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For a slow cooker version, combine all ingredients and cook on low for 2 hours, then switch to warm. To make ahead, assemble without top cheese and refrigerate up to 24 hours; add cheese and bake 10 minutes longer. If dip looks oily after baking, stir before serving. Use full-fat cream cheese for best creaminess. Shred cheese from a block for smoother melting.
