A quick and easy one-pan Tuscan chicken recipe featuring a creamy sauce with garlic, sun-dried tomatoes, spinach, and Parmesan. Perfect for a cozy weeknight dinner with minimal cleanup.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes packed in oil (drained)
  • 3 cups fresh baby spinach
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (about 50 g)
  • 1/4 cup cottage cheese or Greek yogurt (about 60 g) – optional
  • 1 tablespoon chopped fresh basil or parsley for garnish

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and dried Italian herbs.
  2. Heat olive oil and butter in a large 12-inch skillet over medium-high heat until butter melts and oil shimmers.
  3. Sear chicken breasts in the pan without crowding for 4-5 minutes per side until golden brown and almost cooked through (internal temp ~150°F). Cover briefly if needed.
  4. Remove chicken to a plate and tent with foil to keep warm.
  5. Lower heat to medium. Add minced garlic to the pan and sauté for about 30 seconds until fragrant.
  6. Add chopped sun-dried tomatoes and stir for 1 minute to release flavor.
  7. Pour in heavy cream and stir to deglaze the pan, scraping browned bits. Simmer gently for 2-3 minutes until slightly thickened.
  8. Stir in grated Parmesan cheese and optional cottage cheese or Greek yogurt until smooth and creamy.
  9. Add fresh baby spinach and stir gently until wilted, about 2 minutes.
  10. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over top, cover, and simmer on low for 5-7 minutes until chicken reaches 165°F and sauce is thick and bubbly.
  11. Taste and adjust seasoning with salt and pepper. Sprinkle chopped fresh basil or parsley before serving.

Notes

If sauce gets too thick, stir in a splash of chicken broth or water to loosen. Turn down heat if chicken browns too fast to maintain a gentle simmer. For dairy-free, substitute heavy cream with coconut milk and Parmesan with dairy-free cheese or nutritional yeast. Chicken thighs can be used instead of breasts with slightly longer cooking time.
