A quick and comforting one-pot gnocchi dish with a creamy sun-dried tomato sauce and fresh spinach, perfect for busy weeknights or last-minute guests.

  • 1 pound (450g) potato gnocchi, store-bought or homemade
  • ½ cup chopped sun-dried tomatoes packed in oil (drain but keep some oil)
  • 4 cups fresh spinach leaves, roughly chopped (or frozen, thawed, and squeezed dry)
  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream (can substitute with coconut cream for dairy-free)
  • ½ cup (50g) grated Parmesan cheese, plus extra for garnish
  • 2 tablespoons extra virgin olive oil (use some reserved from sun-dried tomato jar)
  • 1 cup (240ml) vegetable or chicken broth
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and chopped sun-dried tomatoes. Stir frequently and cook for about 2 minutes until fragrant but not browned.
  2. Pour in 1 cup of vegetable or chicken broth. Increase heat to medium-high and bring to a gentle simmer. Add gnocchi in a single layer. Cook uncovered for about 5 minutes, stirring occasionally, until gnocchi begin to float and broth reduces slightly.
  3. Lower heat to medium and pour in 1 cup of heavy cream. Add ½ cup grated Parmesan cheese and stir well. Keep stirring to avoid sticking or burning. Add more broth or cream if sauce is too thick.
  4. Toss in 4 cups of fresh spinach leaves. Stir gently until spinach wilts down, about 2-3 minutes.
  5. Season with salt, pepper, and red pepper flakes if desired. Stir and cook for another minute to combine flavors.
  6. Serve hot immediately with extra Parmesan sprinkled on top.

Notes

Stir gently to avoid breaking gnocchi. Adjust liquid levels to keep sauce silky and not too thick. Add spinach at the end to keep it bright and fresh. Use fresh Parmesan for best flavor. For dairy-free, substitute cream with coconut cream and Parmesan with nutritional yeast or vegan cheese.
