Instructions

  1. Season the chicken. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and garlic powder. Let them sit for 5 minutes while you prep the other ingredients.
  2. Sear the chicken. Heat the olive oil in your large skillet over medium-high heat until it shimmers. Carefully place the chicken thighs in the pan. Cook for 5-6 minutes without moving them until deep golden-brown. Flip and cook for another 4-5 minutes until cooked through (165°F internal temp). Transfer to a plate and set aside. Do not wipe the pan clean.
  3. Sauté the aromatics. Reduce the heat to medium. Add the minced garlic and chopped sun-dried tomatoes to the pan. Stir for about 1 minute until fragrant and the tomatoes soften slightly. Scrape up any browned bits from the bottom of the pan.

  6. Wilt the spinach. Add the fresh spinach in handfuls, stirring gently. It will wilt down in about 2 minutes. Keep stirring until all spinach is incorporated and bright green.
  7. Finish the dish. Return the seared chicken thighs to the pan, nestling them into the sauce. Spoon some sauce over the tops. Let everything simmer together for 2-3 minutes. Sprinkle with fresh chopped basil right before serving.
  8. Serve immediately. Spoon the chicken and sauce over pasta, rice, or alongside crusty bread.
