Creamy One-Pot Tuscan Pumpkin Pasta Recipe (Easy 30-Min Dinner)

A savory, umami-packed, silky-smooth pasta sauce made with pumpkin puree, kale, and sun-dried tomatoes. This one-pot wonder is ready in just 30 minutes and is perfect for a cozy weeknight dinner.

  • 12 oz (340g) short pasta (rigatoni, penne, or fusilli)
  • 1 cup (240g) pumpkin puree (not pumpkin pie filling)
  • 4 cups (960ml) vegetable broth (low-sodium preferred)
  • 1/3 cup (55g) sun-dried tomatoes (oil-packed, drained and chopped)
  • 3 cups (90g) fresh kale (chopped, stems removed)
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 1 tbsp fresh sage (chopped, or 1 tsp dried)
  • 1/4 cup (60ml) heavy cream or full-fat coconut milk
  • 1/2 cup (50g) Parmesan cheese (grated)
  • 2 tbsp olive oil
  • Salt and black pepper (to taste)
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and a pinch of salt; cook for 4 minutes until soft. Add minced garlic and chopped sage; cook for 30 seconds until fragrant.
  2. Bloom the Pumpkin: Add pumpkin puree to the pot. Stir and cook for 2 minutes to deepen the flavor.
  3. Build the Broth: Pour in vegetable broth, scraping up any browned bits. Add sun-dried tomatoes, 1/2 tsp salt, black pepper, and optional red pepper flakes. Bring to a boil.
  4. Cook the Pasta: Add dry pasta to the boiling broth. Stir well, reduce heat to a steady simmer, and cook according to package directions for al dente (10-12 minutes), stirring every 2-3 minutes.
  5. Wilt the Kale: When pasta has 3 minutes left, add chopped kale. Stir until wilted.
  6. Finish the Sauce: Remove pot from heat. Stir in heavy cream (or coconut milk) and grated Parmesan until melted and creamy. Adjust seasoning with salt and pepper.
  7. Rest and Serve: Let pasta sit off heat for 2-3 minutes to thicken. Stir, then serve immediately with extra Parmesan.

Notes

Don’t overcook the pasta; cook to al dente to avoid a gummy sauce. Stir frequently to prevent sticking. Let the pasta rest off the heat for a few minutes to allow the sauce to thicken. For a thicker sauce, mash some cooked sun-dried tomatoes against the pot before adding cream.
