A quick and easy 5-minute prep breakfast that yields thick, creamy, and satisfying overnight oats with peanut butter and protein powder. Perfect for busy mornings, this recipe is customizable and keeps you full for hours.

Ingredients

Scale
  • 1/2 cup (50g) rolled oats (old-fashioned oats)
  • 2/3 cup (160ml) milk of choice (e.g., unsweetened almond milk, whole milk, oat milk)
  • 2 tablespoons (32g) creamy peanut butter (natural, no added sugar preferred)
  • 1 scoop (about 30g) protein powder (vanilla or unflavored; whey or plant-based)
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) honey or maple syrup
  • 1/8 teaspoon salt
  • Optional: splash of vanilla extract, sprinkle of cinnamon, or 1 tablespoon cocoa powder

Instructions

  1. In a mason jar or airtight container, combine the rolled oats, protein powder, chia seeds, and salt. Stir to distribute evenly.
  2. Add the peanut butter to the jar.
  3. Pour in the milk.
  4. Drizzle in the honey or maple syrup.
  5. Stir everything together thoroughly for 30-45 seconds, scraping the bottom and sides, until the peanut butter is fully incorporated and no dry pockets remain. Use a small whisk if needed.
  6. Taste and adjust sweetness or salt if desired.
  7. Seal the jar and refrigerate for at least 6 hours, preferably overnight.
  8. Before eating, stir the oats well. If too thick, add a splash of milk; if too thin, let sit longer.
  9. Add toppings (e.g., sliced banana, extra peanut butter, dark chocolate chips) and enjoy cold or at room temperature.

Notes

For best texture, use rolled oats (not quick or steel-cut). Chia seeds are essential for thickness. Let oats sit at room temperature for 5-10 minutes before eating to enhance flavor. Store in fridge for up to 4 days; do not freeze. For vegan version, use maple syrup and plant-based protein powder. For gluten-free, use certified gluten-free oats.
